1
Cook the sweet potatoes by microwaving them for about 10 minutes, or until soft.
-
2
Microwaving time will vary depending on the power of your microwave and the size of the potatoes.
-
3
Set the regular sweet potato aside for the time being.
-
4
In a large bowl smash the purple sweet potatoes well.
-
5
Mix in the egg, salt and flour to form a Playdough-like dough.
-
6
Divide the dough into four equal-sized sections.
-
7
Roll each piece into a rope about an inch in diameter.
-
8
Cut each rope into pieces that are about 1/2 an inch thick.
-
9
In a small saucepan over medium heat, saute the onion and garlic with olive oil until soft.
-
10
Place onions and garlic in a food processor.
-
11
Add the regular (not purple) sweet potato, sage and Parmesan.
-
12
Puree until smooth and set aside.
-
13
Bring the milk to a boil in a small saucepan.
-
14
Toss the gnocchi, 10 or so pieces at a time, into the milk to cook.
-
15
They will rise to the top of the milk when they are done.
-
16
Fish them out with a slotted spoon and place them in a colander to drain fully and cool slightly.
-
17
Repeat until youve cooked all of the gnocchi.
-
18
When you are done, remove the pan from the heat and save the cooking mik.
-
19
After the gnocchi are cooked, mix 1 cup of the reserved milk into the sweet potato sauce.
-
20
Serve the gnocchi topped with the sweet potato sauce while everything is still warm.
