Potato Salad – a delicious recipe with potatoes, white vinegar, oil, salt, pepper, celery. Easy to follow and perfect for any occasion.

Peel potatoes, cut in quarters and boil until done. Drain water and cool.

While potatoes are cooling, mix in a small saucepan vinegar, oil, salt and pepper.

Bring to a boil over low heat.

While potatoes are still a little warm, dice them into a large bowl.

When vinegar mixture comes to a boil, pour this mixture over warm diced potatoes.

Mix the potatoes in the liquid, then pour off excess vinegar mixture. Cover and chill potatoes in fridge.

When potatoes are cold, add diced celery and parsley flakes over potatoes.

Mix in mayonnaise using folder method so as not to break the potatoes.

Paprika may be sprinkled on top before serving.
