Ingredients: 5 large potatoes; 1/2 cube butter; 2 Tbsp. olive oil; 3 large green peppers; 3 large onions; 1 tsp. salt; 1 tsp. cumin; 1 tsp. basil; 2 cloves minced garlic; dash of black pepper; 1 c. diced canned green chiles; 1 c. sour cream; 2 c. milk; 1 1/2 c. grated Cheddar cheese and Swiss; 1 bunch scallions

5 large potatoes
1/2 cube butter
2 Tbsp. olive oil
3 large green peppers
3 large onions
1 tsp. salt
1 tsp. cumin
1 tsp. basil
2 cloves minced garlic
dash of black pepper
1 c. diced canned green chiles
1 c. sour cream
2 c. milk
1 1/2 c. grated Cheddar cheese and Swiss
1 bunch scallions

Clean potatoes; chop bite size and put in boiling water.

Cook until tender.

Meanwhile, saute green peppers, onions, salt, cumin, basil, garlic and pepper in butter and olive oil.

Add green chiles.

Puree 1/2 of potatoes in processor and 1/2 saute in mixer.

Add sour cream, milk, cheese, scallions and remainder of potatoes.
