1
Slice potatoes, then place in cold bowl of water for 10mins.
-
2
Cut up uncooked bacon in small pieces (not too small like Bacon bits, lol)
-
3
Chop up potatoes in small cubes.
-
4
(I cut them in half, then in half again).
-
5
In a large skillet, place bacon & potatoes.
-
6
Turn to Medium High.
-
7
The grease from the bacon should make the potatoes flavorful.
-
8
If you need more liquid, you can add butter.
-
9
Add just ONE teaspoon of each Salt, Pepper & (If you want) Cayenne/Paprika to the skillet.
-
10
Mix in with potatoes & bacon.
-
11
Cook for 15mins or until the potatoes are lightly golden.
-
12
In the mean time, pre-heat oven to 350.
-
13
Use a muffin pan, spray Pam (or any type of spray or melted butter for Non-Stick).
-
14
Once the potatoes & bacon are cooked (use a knife to poke into the potatoes), place on a plate with paper towels to allow the access grease to come off & cool.
-
15
Mix up your eggs, 1/4 cup of water, and the other 1 teaspoon of salt, pepper, cayenne/Paprika in a bowl.
-
16
In the muffin pan, place a few piece of GRADUATED cheese, a tiny spoonful of bacon & potatoes.
-
17
Pour the egg mix on top, it should be ALMOST full to the top.
-
18
Place extra cheese on top if you would like.
-
19
Place muffin pan in 350 oven for about 15mins.
-
20
Use a knife to poke into the quiche to make sure it's fully done.
-
21
(If nothing is on the knife when you pull out, it's done).
-
22
Let cool for 10mins before eating.
-
23
Serve with any sauce or side!
-
24
Enjoy :)
