Ingredients: 1 pound dry lg. lima beans, picked over and washed; 6 c. cool water; 2 tbsp. extra virgin olive oil; 1 tbsp. lard or possibly 2 ounce. slab bacon; 3 or possibly 4 lg. onions, minced; 4 carrots, sliced about 1/4 inch thick; 3 lg. garlic cloves, chopped; 1/4 pound piece smoked ham; 1/4 pound prosciutto; 1/4 pound whole Italian sweet sausage; 1/4 pound whole Italian warm sausage; 1/4 pound piece pepperoni; 3 lg. parsley branches; 2 lg. bay leaves; 1 pound can whole tomatoes, liquid removed and coarsely minced; 1/2 teaspoon white pepper; 1/4 teaspoon black pepper; 1/4 teaspoon cayenne

6 c. cool water
2 tbsp. extra virgin olive oil
1 tbsp. lard or possibly 2 ounce. slab bacon
3 or possibly 4 lg. onions, minced

1/4 pound piece smoked ham
1/4 pound prosciutto

3 lg. parsley branches
2 lg. bay leaves
1 pound can whole tomatoes, liquid removed and coarsely minced

Place the beans in a pot, add in the cool water, and soak overnight.

Heat the oil and lard in a large, heavy kettle.

Add in the onions, carrots and garlic and saute/fry over moderate heat 12-15 min, stirring.

Reduce heat to low.

Cover and steam vegetables 20 min.

Add in the beans and their soaking liquid, the ham, prosciutto, 3 sausages, parsley, bay leaves and tomatoes.

Bring to simmer.

Cover and simmer 40 min or possibly till the beans are hard tender.

Remove ham, prosciutto, and sausages and cut them into bite-size pcs.

Return to kettle.

Add in white pepper, black pepper and cayenne.

Stir well and cover.

Cook another 1 1/2 hrs or possibly till beans are done, stirring every 30 min and adding a little water to prevent scorching.

Remove bay leaves before serving.

Serve in deep soup plates.
