Pork Loin Roast With Blackcurrant Mustard Sauce

   Combine mustard, garlic,honey, wine and soy sauce. Pour over por loin and marinate at least 3 hours.

   Take pork out and put marinade in small saucepan. Rub pork with vegetable oil, salt, pepper, and crushed fennel seeds. Put in preheated oven at 425 degrees. After 20 minutes, turn down to 325. After 40 more minutes, start checking temp. Roast in3minute increments until instant temp is 145-150. Take out and let sit for 5 minutes.

   Pour cooking juices into saucepan with marinade. Boil for 5 minutes; thicken with cornstarch and a little water, cook till thickened.

   Slice pork thin, serve with brown rice and sauce.
