clean and cut chicken into cubes about 1 inch by 1 inch

cook bacon until crisp remove from pan set aside

discard all the bacon grease except two tablespoons or so

brown chicken which you have seasoned with desired amount of salt pepper and garlic powder in bacon grease add shallots and onions and cook until onion is slightly translucent add mushrooms and a tablespoon of butter saute for a few minutes

spray a casserole with cooking spray add thawed and strained spinach and mushroom soup more salt pepper and garlic then add remaining ingredients from saute pan including some of the grease

mix together cover and bake in a 350 degree oven for 45 minutes remove cover sprinke cheese return to oven until cheese is melted serve with rice or potatoes
