Polish Honey Cookies

   Combine honey and sugar. Add eggs; beat. Sift flour, soda, cinnamon, nutmeg and ginger. Add enough flour to make a stiff dough. Shape into a ball and refrigerate 2 hours. Roll out on a floured board to a 1/4-inch thickness and cut with a round cookie cutter. Brush top of each cookie with egg white and press an almond into the center. Cook on greased cookie sheet for 12 to 15 minutes at 375u00b0.
