Boil water in a lidded pot such that you could float the Poach Pod in it while covered. Place the pat of butter in the pod and spread it around to coat the interior. Add the polenta, salt, paprika, mustard, cayenne and 2 Tbsp of cold water to the pod and gently mix. Add 3 Tbsp of boiling water (from the pot) to the pod, then lower the pod into the pot and cover. Lower the heat so that the water is simmering and not in a rolling boil. After five minutes, place the cube of cheese in the center of the floating pod and replace the lid. After 20 to 25 minutes, remove the pod from the pot and carefully slide the dome of polenta onto a plate.

Serve plain or with a tomato sauce.
