Preheat oven to 180o Celsius

Grease and line the base of a 24cm springform cake pan with non-stick paper.

Combine flour, sugar and coconut in a mixing bowl. Stir in the melted butter, eggs, milk and vanilla and mix well.

Spread half the mixture in cake pan. Scatter plums over mixture. Spread remaining mixture over plums.

If have extra plums cut into segments and arrange over the top of the cake.

Bake for 1 hour or until cooked when tested with a skewer.Cover with foil if it is overbrowning and still not cooked.

Stand for 10 minutes in a pan before releasing the springform. Serve sliced, warm or at room temperature.
