1 cedar plank, soaked
1 head fennel, trimmed and sliced
1 medium onion, sliced
½ teaspoon kosher salt
¼ teaspoon black pepper
1 green bell pepper, thinly sliced
4 ripe plum tomatoes, seeded and sliced
1 teaspoon fresh sage, chopped

3 tablespoons malt vinegar
1 teaspoon white sugar
1 tablespoon Dijon mustard

Preheat grill to high.

In a medium bowl, combine sliced fennel and onion and season with salt and pepper.

Place the soaked plank on the grill, close the grill lid, and bake for 3 to 5 minutes until it begins to crackle and smoke.

Lift the grill lid and carefully place the fennel and onion onto the plank.

Close grill lid and roast for 10 to 15 minutes until the vegetables are golden.
