Dissolve 1/4 teaspoon sugar in 1/2 cup of warm water in a small bowl.

Sprinkle yeast over the water and let stand for 5 minutes.

Mix flour, 1/4 cup sugar, and salt in a bowl.

Stir in yeast mixture, beaten egg, and melted butter.

When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.

Lightly grease a large bowl, and then place the dough in the bowl and turn it to coat will oil.

Cover and either let in rise in a warm place until doubled in size (about an hour and a half) or place in the refrigerator overnight.

Preheat oven to 375 degrees F.

Mix together 1 beaten egg, the oregano, pepper, parsley, garlic salt, and parmesan cheese in a small bowl.

Punch down the dough and divide it into 10 equal pieces.

Using your hands, flatten each piece into a small rectangle about 4 inches square.

Spread a thin layer of filling on the dough.

Place 3-4 slices of pepperoni on each dough square, overlapping.

Sprinkle a little mozzarella cheese on top of the pepperoni.

Roll the dough around the pepperoni/cheese, and pinch the edges close.

Place the rolls on a prepared cookie sheet with the seam-side down.

Bake for about 15-20 minutes or until the bottoms are lightly browned and tops are barely golden.
