Peppercorn Herb Crusted Beef

   Preheat oven to 450u00b0F. Combine herbs, seasoning, peppercorns and 1 tbsp salt.

   Coat beef in olive oil and season with herb and spice mixture. Place in a shallow baking pan and roast for 30 mins. Reduce heat to 325u00b0F and roast for 1 hour, or until a thermometer inserted in the thickest part reads 140u00b0F for medium rare, or until cooked to your liking. Remove from oven and tent loosely with aluminum foil. Let rest for 15 mins before slicing.
