4 quarts water
2 tablespoons butter
1 tablespoon vegetable oil
½ cup chopped onion
2 large tomatoes, peeled and chopped
¼ cup whipping cream
¼ cup vodka
1 tablespoon dried red pepper, crushed
13-½ cup freshly grated parmesan cheese
parmesan cheese, for passing

Steep the pepper in the vodka 3 days before using.

Bring the water to the boil in a large pot and add the pasta.

Allow it to cook until al dente (approximately 10 minutes, but taste it).

To make the sauce, melt the butter in a saucepan and add the oil.

When hot, add the onion and stir well for 5 minutes to soften, not brown.

Add the tomatoes and stir.

Add the cream and stir to heat.

Strain the pepper from the vodka and add the vodka.

Simmer for a further 2-3 minutes.
