Wrap in plastic wrap and chill for 30 mins. Roll out on a lightly floured surface then use to line an 8 inch tart pan. Line with parchment paper and pie weights. Blind bake for 10 mins. Remove pie weights and paper.

Meanwhile, to make the filling, whisk together sugar and eggs. Add maple syrup and honey. Set aside for 5 mins. Remove any scum that has risen to the top then fold in nuts. Transfer to prepared tart shell and bake for 50 mins, until filling domes slightly in center. Let cool for 25 mins. Serve warm or cold with whipped cream and strawberries.
