2 Tablespoons Olive Oil
1/2 Medium Onion, Diced
3 cloves Garlic, Minced
1 Tablespoon Fresh Ginger, Peeled And Minced
1/2 teaspoons Ground Cloves
1/2 teaspoons Cayenne Pepper
1/2 teaspoons Cumin
1/4 teaspoons Salt
1 Carrot, Diced
1 Medium Sweet Potato, Cubed
2-1/2 cups Vegetable Broth
1 Tablespoon Agave Nectar
2 Tablespoons Peanut Butter
3 cups Spinach, Chopped

1. Heat the olive oil in a pot over medium heat.

2. Once oil is hot, add the onions and saute for about 5 minutes.

3. Add the garlic and ginger and continue sauteing for another 2 minutes.

4. Stir in the spices and salt and cook for additional 1-2 minutes, until everything is nice and fragrant.

5. Add the carrot, sweet potato, broth and agave or honey and bring to a boil and then reduce to a simmer.

6. Stir in the peanut butter and let it stew for about 15 minutes.

7. Add in the spinach, and stir just until wilted.
