Place sugar, syrup and 1/4 cup of water in a medium saucepan on low heat. Stir until sugar dissolves. Add peanuts. Boil 8-10 mins, until just beginning to turn golden.

Quickly stir in butter and baking soda. Pour onto prepared pan. Cool. Break brittle into pieces. Process 1/2 of the brittle in a food processor into large crumbs.

Line an 8 x 4 inch loaf pan with plastic wrap, extending above sides.

Spoon 1/2 the ice cream into a bowl and stir in brittle crumbs. Spoon into pan. Smooth top and freeze 30 mins, until firm.

Place remaining ice cream into a mixing bowl. Beat in cocoa with an electric mixer until well combined. Spoon into loaf pan. Cover with plastic wrap and freeze overnight.
