Ingredients: 3/4 lb. boneless chicken breast, sliced; 1 egg white; pinch of salt and pepper; 1 tsp. cornstarch; 1 Tbsp. dry sherry; 5 Tbsp. oil; 1 tsp. salt; 1/4 lb. fresh sliced mushrooms; 2 celery stalks, sliced; 3/4 c. snow peas; 10 water chestnuts, sliced; 3 cloves garlic, minced; 3 green onions, sliced; 2 tsp. soy sauce; 1/2 tsp. sugar

3/4 lb. boneless chicken breast, sliced
1 egg white
pinch of salt and pepper
1 tsp. cornstarch
1 Tbsp. dry sherry
5 Tbsp. oil
1 tsp. salt
1/4 lb. fresh sliced mushrooms
2 celery stalks, sliced
3/4 c. snow peas
10 water chestnuts, sliced
3 cloves garlic, minced
3 green onions, sliced
2 tsp. soy sauce
1/2 tsp. sugar

Flatten chicken breasts.

Slice into pieces.

Mix egg white, salt, pepper, cornstarch and sherry.

Toss with chicken.

Marinate 10 minutes.

Heat 2 tablespoons oil and salt in wok.

Saute the snow peas, mushrooms, celery and water chestnuts for 2 minutes. Remove and set aside.

Heat remaining 3 tablespoons oil in pan. Stir-fry garlic, green onions and chicken over high heat a few minutes.

Add soy and sugar.

Toss, then add cooked vegetables and stir-fry 1 minute.
