Pastry Dough For Spinach Pie Or Torta

   Put flour and salt in food processor, Add butter cut in small cubes. Pulse until mixture resembles course bisquick.

   Add lemon juice to water. With food processor running add water a few drops at a time until the dough forms a ball. May not need the entire 1/2 cup of water. Do not put in too much water.

   Remove the ball from the food processor. Wrap in plastic film and cool in freezer for 45 minutes.

   On a floured board roll out dough into a rectangle. Fold in 1/3ds and roll out a second time. Repeat for a 3rd roll out.

   Let dough rest for 15 minutes in the refrigerator.

   Roll to desired thickness and cut into squares for the spinach pies.
