Ingredients: 1 lb chicken breasts (cut in half) or 1 lb chicken tenderloins; 1 tablespoon Mrs. Dash seasoning mix; 1 tablespoon butter; 2 tablespoons olive oil; 12 yellow onion, diced; 3 garlic cloves, minced; 12 ounces mushrooms, sliced; 2 zucchini, cut in bite-size chunks; ⅔ cup sun-dried tomato; 2 (15 ounce) cansfire roasted diced tomatoes; 1 teaspoon italian seasoning; salt and pepper, to taste; 1 teaspoon balsamic vinegar (optional)

1 lb chicken breasts (cut in half) or 1 lb chicken tenderloins
1 tablespoon Mrs. Dash seasoning mix
1 tablespoon butter
2 tablespoons olive oil
12 yellow onion, diced
3 garlic cloves, minced
12 ounces mushrooms, sliced
2 zucchini, cut in bite-size chunks
⅔ cup sun-dried tomato
2 (15 ounce) cansfire roasted diced tomatoes
1 teaspoon italian seasoning
salt and pepper, to taste
1 teaspoon balsamic vinegar (optional)

In a large saute pan or cast iron skillet, melt the butter and 2 tbsp olive oil over medium heat until it begins to bubble.

Add the seasoning mix and stir well to combine.

Pat the chicken dry on both sides.

Add the chicken and cook until browned (5-7 minutes).

Turn and cook the other side until browned and the chicken is cooked through.

While cooking, brush some of the butter/oil/seasoning mixture on the side of the chicken facing up.

Remove chicken and set aside on a plate.

In the remaining oil/butter mixture, saute the onion for 3 minutes on medium heat.

Add the mushrooms and continue to saute for 5 minutes.

Add garlic, zucchini and sun-dried tomatoes.

Saute for 2 minutes.

Add the diced tomatoes, Italian seasoning and salt and pepper to taste.

If using, stir in the balsamic vinegar.

Transfer the chicken back to the pan and spoon some of the sauce and vegetables over top of the chicken.

Cook, covered, until the chicken is heated through and the sauce is bubbling (10-15 minutes).
