Preheat oven to 375. Melt abouot 2 Tbsp butter in large skillet. Saute 1 bunch chopped green onions, 1 tbsp chopped garlic and 1/2 cup chopped parsley until tender. Set aside. Then sautee in about 3 Tbsp butter 1/2 cup sliced baby bella mushrooms, 1/2 cup sliced button mushrooms, 1/2 cup crimini, morels and/or oyster mushrooms (depending upon whats available) Let cool then puree the mushrooms, green onion, garlic and parsley mixture in food processor. Add this mixture to roasting pan with 1 pint oysters and liquor. Add 1 Tbsp dry white wine. Sprinkle with french bread crumbs to thicken. Add salt, black and white pepper to taste. Bake until bubbling about 15 minutes. Do not overcook oysters. Sometimes I decorate with lemon slices before baking.
