Ingredients: 1 tbsp oil; 3/4 cup shao xing wine; 4 slice dried tangerine or orang zest; 1 star anise; 6 slice ginger; 2 clove garlic; 1 tbsp scallion; 800 grams oxtail; 2 cup water; 2 tbsp dark soy sauce; 1 tbsp oyster sauce; 1 tsp light soy sauce; 2 tbsp rock sugar or brown sugar

1 tbsp oil
3/4 cup shao xing wine
4 slice dried tangerine or orang zest
1 star anise
6 slice ginger
2 clove garlic
1 tbsp scallion
800 grams oxtail
2 cup water
2 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp light soy sauce
2 tbsp rock sugar or brown sugar

brown oxtail then removed oxtail and set aside

with the same pan add shao xing wine scrapping browned bits to a boil

add mix soy sauce and sugar with water onto pan

add scallion and garlic with ginger together with oxtail then bring to a boil

transfer all ingredient into preasure cooker on high for 50 minutes

strain sauce and then pour strained clear sauce on oxtail

put in oven at 200c cover and bake for 20 minute then uncover bake for another 20 minute
