Preheat oven to 375.

In a saucepan, heat the milk on medium heat until very hot but not quite boiling; stir occasionally to prevent scorching. Stir in the oats, maple syrup, nutmeg, and apples and continue to cook for several minutes, just until the mixture returns to a boil. Remove from the heat.

Coat a casserole with cooking spray, and throw in the raisins and salt. Pour (carefully!) the milk mixture over and stir well. Bake for 30 minutes, until all of the liquid is absorbed and the oatmeal is creamy. It will puff up slightly when finished.

Stir well before serving.

Reheats leftovers in the microwave for a couple of minutes and stir in some milk to loosen it up.
