Dissolve yeast in 1/4 cup warm water.

Let stand 10 minutes. Combine dissolved yeast, eggs, 2 1/2 cups flour, 1 cup warm water, shortening, sugar and salt in a large mixing bowl.

Beat until smooth about 2 minutes at medium speed, scraping sides of bowl often with wooden spoon.

Stir in remaining flour to make a stiff dough.

Cover.

Let rise until double, about 1 hour.

Punch down, refrigerate overnight.

Three hours before baking, divide dough in half.

Roll out each half into a rectangle.

Spread with butter. Cut out shape as desired.

Place in a greased baking pan.

Cover and let rise 3 hours until double.
