1/4 cup all purpose flour
2 tbsp butter
2 tbsp olive oil
1 small onion, chopped
4 garlic cloves, chopped
1/2 cup beef stock or water, as needed
1/4 cup tomato paste
3 tbsp chopped parsley
2 anchovy fillets in oil, minced
Grated zest of 1 lemon

Melt the butter with the oil in a large flameproof casserole over medium-high heat.

Add the veal and cook, turning occasionally, about 5 minutes, or until browned all over.

Cook, stirring occasionally, for 5 minutes or until softened but not colored.
