Preheat oven to 325 F. Sift both flours, salt and cinnamon into separate bowl. Beat butter with electric mixer until light and fluffy. Add cane sugar, brown sugar, vanilla and egg yolks, stirring after each ingredient. In a small bowl sprinkle baking soda onto yogurt, stir and let sit for two minutes. Add yogurt and baking soday mixture to batter and mix to combine. Slowly add flour mixture, stirring gently. In a separate bowl, whisk egg whites util they almost form peaks. Fold into batter in three or four folds. Sprinkle chocolate into mixture and gently stir util just combined. Drop by spoonful onto pizza stone and bake about 17 minutes. Cool on rack until completely cool. Alternately, you could use a baking sheet with a silpat, but reduce cooking time to 13 minutes. Bon appetit!
