Orange And Vanilla Cupcakes

   Preheat oven to 400 degrees Fahrenheit.

   Whisk the eggs with the sugar until the mixture whitens.

   Add the melted butter, the juice and the zest of half an orange. Mix well.

   Add the flour gradually in increments.

   Fill in the cupcake cups with the batter until 2/3 full.

   Bake for approximately 25 minutes.

   Once the cupcakes are cooled, prepare the icing: mix the mascarpone with the powdered sugar and vanilla extract. Put this mixture into a piping bag and decorate as you wish! You can even add a half slice of crystallised orange on top if you like.
