8 whole Red Potatoes
1 whole Sweet Potato
5 whole Carrots
1 whole Onion
8 whole Cherry Tomatoes
1 package Cremini Mushrooms, Sliced (8 Oz.)
2 cloves Garlic
6 whole Chicken Thighs
1 teaspoon Salt, Kosher
1/2 teaspoons Pepper
2 Tablespoons Red Wine Vinegar
2 Tablespoons Olive Oil
1 cup Dry Red Wine
2 sprigs Fresh Rosemary
2 sprigs Fresh Oregano Or Thyme

Preheat oven to 375 degrees F.

Cut the regular (skin on) and sweet potatoes (peeled) into bite size chunks.

Peel and slice carrots into 1/4 inch rounds.

Peel and cut onion into bite size chunks.

Slice cherry tomatoes in half.

Peel and finely mince garlic.

Add all of the first 7 ingredients into a large heavy pot with a lid.

Arrange chicken on top and sprinkle with salt and pepper.

Pour vinegar, oil and wine over top.
