Olive Oil, Spelt And Orange Loaf Cake

   Preheat the oven to 160C.

   Grease a loaf tin and set aside.

   Beat the eggs in a large bowl.

   Add the olive oil, orange peel, buttermilk (or milk), and sugar, and mix well.

   Sift the flour, baking powder, baking soda, and salt over the mixture and gently mix all the ingredients together until smooth.

   Pour the mixture into a loaf tin and bake for 50-55 minutes or until a skewer inserted in the center comes out clean. (If the loaf appears to brown too quickly, cover with aluminum foil.)

   This cake will keep fresh and moist for up to 5 days if stored in a metal container or storage bag.
