Place the couscous and 1 tbsp olive oil in a large heatproof bowl. Pour over 2 1/2 cups boiling water, cover and leave to soak for 8-10 minutes until the grains are tender and swollen and the liquid is absorbed. Fluff up the couscous with a fork to separate the grains; set aside.

Heat the remaining olive oil in a large heavy-based frying pan. Add the almonds and cook, stirring continuously, for 3 minutes until just golden. Add the olives to the pan and cook for another 1 minute, stirring continuously.
