Nutty Potato Chip Cookies

   Bring butter to room temperature (about 45 minutes to an hour). Using a wooden spoon, cream butter and sugar together. Scrape down the sides of bowl with rubber spatula. Stand mixer can be used.

   Add in vanilla and flour.

   Mix in potato chips and, if using, nuts and chocolate chips.

   Preheat oven to 350 degrees.

   Dough can be rolled out and cut with cookie cutters or dropped by teaspoons onto an ungreased cookie sheet.

   Bake for 13-15 minutes.

   Let cool. Cookies can be dipped in melted chocolate for an added treat.

   Note: Dough can be colored with food coloring before baking for holidays.
