2 cucumber sliced

8 ounces bacon small dice, cooked crisp, rendered fat reserved
3 egg yolks
1 teaspoon lime juice
1 teaspoon sherry vinegar
1/2 teaspoon whole grain mustard
1 avocado
1 ounce rendered fat
3/4 cup olive oil
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper

Combine all ingredients except cucumber and let steep 2 minutes.
