Dice One large onion and two to three stalks celery and 4 cloves garlic. Add to medium sauce pot. cook on medium low for approx 10 minutes until onion is translucent.

Add 1 can broth and 1 small can tomato paste. Increase Heat to High and bring to boil and reduce heat to low and simmer for 5 minutes. Add Coconut milk and continue to simmer for approx 10 minutes.

In the meantime bring enough water to a boil to cook one package of pasta. I like Linguine.

While pasta is cooking, brown 1 pound of ground beef and about 1.5 tsp salt and 1.5 tsp pepper. When meat is just browned through add to sauce.

Continue to simmer sauce adding 1 can drained artichoke hearts. Taste and add salt and pepper to taste.

When Pasta is cooked drain and toss with a few tsp of olive oil. Plate pasta and top with sauce. Then top with sun dried tomatoes.
