Add eggs to boiling water and boil for 15 min. with lid slightly ajar.

Dice shallots or onions. Set aside. Mince garlic. Set aside.

Slice bacon stips in 1 inch pieces and add to pre-heated non-stick skillet. Fry on medium high heat until slightly crisp. Drain in pan lined with a sheet of paper towel.

Drain off 1/2 of the bacon fat reserving the other half in the pan. Add the olive oil to the pan. Add the shallots or onions and garlic. Saute until onions or shallots becomes opaque over medium heat. Add the balsamic vinegar. Simmer for about 2 minutes or until the dressing reduces.

Poor dressing over spring greens. Dice boiled eggs and add to salad. Add bacon pieces. Toss.Divide among 2 plates. Sprinkle each serving with freshly ground black pepper and serve.
