Using a large oven safe skillet, add pork to skillet and season with salt, pepper, sage and thyme. Cook ground pork for 3-4 minutes. Add diced peppers and onion, and continue to cook until pork is fully cooked. Stir maple syrup in with pork and vegetables.

In a large bowl, beat eggs and 1/4 cup of milk. Heat a nonstick pan on medium heat, and add 1 tablespoon of melted butter. Add eggs and scramble until just set. The eggs will cook more in the oven. Spread egg evenly over ground pork and vegetables in skillet.

Bring a large saucepan to medium-high heat. Melt remaining 1 tablespoon of butter and whisk in flour until combined. After 1 minute, stir in remaining 1 1/2 cups of milk and whisk until thickened slightly, about 2-3 minutes. Turn off the heat and add 1 cup of shredded cheese. Stir to combine cheese into sauce. Drizzle the cheese sauce over eggs in skillet.

Place tator tots evenly over cheese sauce in skillet. Cover skillet with foil, and bake for 20-25 minutes at 425u00b0F. Remove foil and sprinkle with remaining 1/2 cup of shredded cheese. Return to oven and bake for 5 minutes until cheese is melted and tator tots are crispy.
