The below directions are for making one sandwich at a time.
-
2
Above ingredients are for 2 sandwiches.
-
3
Beat the egg in a shallow bowl.
-
4
Set it aside.
-
5
Heat a cast iron skillet over medium-high heat.
-
6
Melt 1/2 tablespoon each of butter and oil in the skillet.
-
7
Quickly coat both sides of two slices of bread in beaten egg and place them in the hot skillet facing each other as if they were an open book.
-
8
This will ensure the finished sandwich will have both slices of bread facing the same direction (click on the link to my blog to see step-by-step photos).
-
9
When the 2 slices of bread are golden brown on the bottom, flip only one slice and quickly top it with one slice of fresh mozzarella cheese.
-
10
Sprinkle with a little salt and pepper and top the cheese with the other slice of bread, toasted side against the cheese (you should have a slice of yummy mozzarella cheese sandwiched between two sides of toasted bread).
-
11
Melt another 1/2 tablespoon each of butter and oil in the skillet and fry both the top and bottom sides of the sandwich until golden on both sides.
-
12
Remove sandwich from pan, sprinkle with salt, and serve topped with fresh basil leaves, sliced tomatoes, or pesto.
-
13
Repeat for the other sandwich.
