Heat red wine vinegar in pot; add onions and reduce until caramelized.

Spray flat tray with cooking oil and place one sheet of puff pastry, Score a line roughly 2 cm.

Cook in moderate oven (350F) for 10 minutes.

Remove from oven.

Remove caremalised onions from pot and spread evenly over puff pastry, layer mushrooms over onions.

Spread goat cheese over the top and cook in a moderate oven (350F) for 20 minutes or until the goat cheese has started to slightly melt.

To give the pastry a nice brown colour, brush with an egg wash lightly before placing back into oven.

Remove tart from oven, slice into sections and serve with crusty bread and salad.

We had a white wine with this, but even a nice smooth red would be perfect.
