Muffin Tin Omelets

   Preheat oven to 375A.

   Prepare your favorite omelet fillings.

   I used green onions, sliced ham, and poblano peppers.

   Grease a 6 spot muffin tin.

   Fill each cup with the omelet fillings.

   Add cheese on top.

   Mix eggs, milk, baking powder, oil, salt, and pepper in a bowl.

   Pour the mixture into each cup until it covers the cheese.

   Make sure to leave a little room in each cup for the eggs to expand.

    Place the tin in the oven and bake for 20-25 minutes.

    Remove from oven and let cool for 5 minutes.
