Preheat oven to 350 degrees Fahrenheit. Prepare baking sheets with parchment paper or a silicon baking mat.

Beat the butter and sugar together with a wooden spoon or a stand mixer.

Beat in egg and vanilla until combined. Add peanut butter and beat until creamy and smooth.

Add flour, baking soda & salt and stir until just combine.a few streaks are ok.

Add muesli and chocolate chips and stir by hand until combine.

Drop cookies by heaping tablespoons onto baking sheets and pat gently with spoon to flatten. They won't spread much so you can place them 1 in apart.

Bake for 9-10 minutes until barely set (should not look shiny). Take out of oven and let cookies continue to bake on pan for 15-30 minutes and then remove to rack to cool completely. This makes the cookies super soft and delicious!
