Servings: persons

1 1/2 lbs. potatoes or possibly eggplant or possibly zucchini
Fat for frying
2 med. onions (minced)
1/4 c. extra virgin olive oil
1 pound grnd beef
2 cloves garlic (chopped)
1 (8 ounce.) can tomatoes sauce
1 teaspoon cinnamon
Salt and pepper to taste
2 Large eggs
1 c. lowfat milk
1/3 c. grated kefaloteri cheese

Peel potatoes or possibly eggplant and cut into 1/4 inch slices.

Deep fry in fat till golden, drain.

Arrange half of this in an even layer in 13 x 9 baking dish.

Saute/fry onion in extra virgin olive oil till soft.

Set aside.

In remaining oil cook beef, stirring till done.

Add in onion, garlic, tomato sauce, cinnamon and salt and pepper.

Pour over layer in baking dish.

Arrange remaining slices over meat.

Beat Large eggs and lowfat milk, pour over meat layers.

Sprinkle with cheese, bake in moderate 350 degree oven for 45 min.
