Brown meat with onions and garlic

Add basil, oregano, cinnamon, tomato sauce, salt and pepper. simmer 1/2 hour and then add bread crumbs.

Split eggplants in half lengthwise. peal & cut into 1/2 inch slices. (Put into colander with salt for 15 minutes.) Brush eggplant with olive oil and broil about 4 minutes until just brown.

Layer eggplant, over lapping in a 12 x 7x2 inch pan. Spoon the meat sauce evenly and sprinkle with 2 Tbs. each of cheeses. Add another layer of eggplant and cover with white sauce.

White sauce: Melt butter,stir in flour and milk until thick. (I use the microwave for this).Add salt and Pepper and eggs.

Sprinkle with rest of cheese and a little cinnamon on top.

Bake 35 - 40 minutes at 350 degrees. Top should be golden.
