Combine 1/4 cup of the oil, half each of the cumin and paprika, honey, sumac and cayenne pepper in small bowl until well blended. Rub all over beef to coat. Set aside to marinate for 30 mins.

Preheat the oven to 250u00b0F. Arrange onions in single layer in baking dish. Place beef on top. Add stock. Roast for 2 hours 15 mins, or until beef is tender.

Meanwhile, line a baking pan with parchment paper. Arrange cauliflower in single layer on pan and drizzle with remaining 1/4 cup oil. Sprinkle with remaining combined cumin and paprika. After meat has cooked for half the time, place cauliflower in oven and continue roastng. Add more stock to beef if needed

Remove beef from dish and cover loosely with foil. Let stand for 15-20 mins. Serve sliced roast beef with onions, cauliflower and steamed green beans.
