Blend vinegar and water; bring to a boil.

Remove from heat. Add carrots, garlic, parsley, cloves and 1 onion; allow to cool. Put moose in this mixture; let marinate for 24 hours in a cool place.

Take moose out of mixture.

Dry it with paper towels; sprinkle with salt and pepper.

Rub in flour.

Put 4 slices of bacon over moose.

Add white onions and place in baking dish. Brown on both sides in hot oven about 30 minutes.

Add all vegetables in which moose marinated; add a little of the liquid. Lower heat to moderate oven.

Baste occasionally with liquid, using enough to make a gravy.

Roast 1 1/2 hours or until tender, then add sherry.

Simmer slowly for 10 more minutes.
