Preheat oven to 450

Sift flour and then measure out 2 cups.

Add just the flour and shortening to mixing bowl and cut in with a pastry blender until well combined.

Add buttermilk and stir as little as possible, just until the flour mixture is moistened.

Wipe countertop w/wet sponge and lay down two sheets of wax paper. Sprinkle with a good coating of flour and turn out dough onto the flour. Sprinkle more flour on top. Pat out to about 1/2 inch thick and cut out biscuits. (Handle the dough as little as possible.) Set biscuits on a greased pan. Re-roll dough until all is used up.

Bake 10-12 minutes until lightly browned & serve immediately.
