Mock Apple Rings – a delicious recipe with cucumbers, lime, water, vinegar, red food color, alum. Easy to follow and perfect for any occasion.

1 gal. cucumbers, peeled, sliced and seeds cut out
1 c. lime
4 1/2 qt. water
1/2 c. vinegar
2 tsp. red food color
1/2 tsp. alum
2 c. vinegar
2 c. water
7 c. sugar
4 sticks cinnamon
1 c. red hot cinnamon candy

Soak the first 3 ingredients for 24 hours.

Rinse and soak in clear water for 3 hours.

Mix 1/2 cup vinegar, food color and alum.

Add cucumbers and cover with water.

Simmer 2 hours and drain well.

Mix 2 cups vinegar, 2 cups water, sugar, cinnamon and candy and heat until candy melts.

Pour over cucumbers.

Let stand overnight.

Reheat and can in boiling water bath.
