Grease 4 - 5 inch fluted tart pans. Place on a baking tray.

In a food processor, process prunes until finely chopped. Add walnuts and process to fine crumbs. Add melted butter and pulse until combined. Press mixture into bases and sides of prepared pans. Chill for 30 mins.

Meanwhile, place chocolate in a small heatproof bowl over a double boiler. Heat, stirring, for 2-3 mins, until melted and smooth. Bring heavy cream and coffee to a boil. Whisk into melted chocolate until combined. Distribute between chilled tart shells. Chill for 30 mins, until almost set. Top with raspberries and chill for another 2 hours, until set.
