Preheat oven to 350 F. In a medium bowl set over a pot of barely simmering water, melt the 8 ounces of chocolate chips with the butter. Stir constantly and heat until smooth, then remove the bowl from the heat. Set aside and cool to lukewarm.

Then stir in the sugar, instant coffee and vanilla. Then add the eggs one at a time, stirring well after each. Add salt and flour and mix until just combined. Stir in the chocolate chips and pour the mixture into a lightly greased 9x13 baking pan. Bake for about 25-30 minutes or until a toothpick is inserted and comes out with moist crumbs on it. Cool completely in pan and then cut into squares. Sprinkle with fleur de sel or sea salt if desired.
