Distribute between paper liners and bake for 10 mins, until a skewer inserted in the center comes out clean. Let cool in pans for 2 mins then transfer to a wire rack to cool completely.

Stir over a small saucepan of simmering water until icing is spreadable. Divide into 4 small bowls and tint each with 1 of the 4 food colorings. Spread over cool cupcakes.
