2 cloves garlic, minced

3 tbsp extra virgin olive oil
1 tbsp lemon juice
1 pinch chili flakes
1 1/2 tbsp finely chopped preserved lemon rind

Combine ground lamb, egg, cumin, 1/2 tsp salt, garlic, mint, olive oil and 1-2 tbsp water. Shape into 12 mini burger patties. Arrange on a tray and chill for 1-2 hours.

To make the dressing, whisk together extra virgin olive oil, lemon juice, 1/4 tsp salt and chili flakes. Mix in preserved lemon.

Heat extra olive oil in a large frying pan over medium heat. Cook patties until browned on both sides and cooked to your liking.
