Spray 2 mini muffin tins with non-stick cooking spray.

Fill each one liberally with pinches of the filling ingredients.

Typically for a holiday, I make several varieties besides the sausage & potato.

You can substitute the filling ingredients above with some of the following options or your own creation:.

*Smoked Salmon, chive, & white onion.

*Ham & Swiss.

*Crab, Potato, & Bell Pepper.

*Bacon & Cheddar.

*Spinach, Mushroom, and White Onion.

*Tomato, Ricotta, & Pancetta.

*Green Chili, Scallion, Monterrey Jack.

Whisk together the Custard ingredients in a large measuring cup (or a bowl with a pouring spout).

Pour some custard in each full muffin tin VERY carefully.

You want to fill each one to the top but do not over fill or your pan will be a mess -- and they won't look as pretty for guests.

Carefully place the muffin tins in a 350 degree oven.

Bake for about 35-45 minutes -- until cooked through and golden brown on top.

Serve to your guests family style or individually.

I like to garnish with some fresh herbs or a touch of a cheese sauce.

Fresh chopped sage goes well with the Potato & Sausage filling.
